The Best High Protein Blueberry Banana Bread

I was inspired to create this recipe when I got the MyVegan Blueberry and Cinnamon protein blend. I know banana breads have been over done a bit since lockdown (this is the third one I've made) but I definitely perfected the recipe here!!!


Ingredients:

2 large bananas

2 egg whites

150ml of water

170g of oats (or if you already have oat flour that)

2 tsp of baking powder

2 tsp of cinnamon

1/4 of a cup of blueberries


Equipment:

Blender

Sieve

2 bowls (one big, one small)

Wooden spoon

Fork


Directions:


1.) Preheat the oven to 180 degrees celsius and line a loaf tin.


2.) Blend 170g of oats to make a flour like consistency. Don't worry if you can't get it to a complete flour, thats what the sieve is for.


3.) Sieve your oat blend into a big bowl.




4.) Add 60g of protein to the mix, followed by 2 tsp of baking powder and 2 tsp of cinnamon.


5.) In a smaller bowl mash the bananas, it doesn't matter if they still have small lumps but mash them as well as you can.


6.) Add 2 egg whites into the banana and beat together. Then add 150ml of water to the mix and beat more.


7.) Pour the wet ingredients into the dry ingredients and mix thoroughly into a thick batter.


8.) Add you blueberries into your batter and stir these about until they are well mixed.


9.) Spoon your mixture into your loaf tin and then place in the middle of the oven for around 40 minutes. At the 40 minute mark use a knife and make sure it comes out as clean as possible (because of the blueberries it will not be completely clean). The leave in tin for 10 minutes before taking out and putting on a cooling rack. Once it has cooled enjoy!
